Ilish Macher Chutney

Ingredients:

  • 1 cup ilish (hilsa) fish, cooked and flaked
  • 1 onion, chopped
  • 2-3 green chilies, chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon fenugreek seeds (methi dana)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon sugar
  • 1/4 cup vinegar
  • Salt to taste
  • 2-3 tablespoons mustard oil
  • Coriander leaves for garnishing

Instructions:

  1. Cook the ilish fish and flake it into small pieces. Keep it aside.
  2. Heat the mustard oil in a frying pan or kadhai over medium heat.
  3. Add the mustard seeds, cumin seeds, fennel seeds, and fenugreek seeds to the pan and fry for a few seconds until they start to crackle.
  4. Add the chopped onions, green chilies, ginger paste, and garlic paste to the pan and fry until the onions turn translucent.
  5. Add turmeric powder, red chili powder, and salt to the pan and fry for a minute.
  6. Add the flaked ilish fish to the pan and stir well.
  7. Add sugar and vinegar to the pan and mix well.
  8. Cook for a few more minutes until the chutney thickens.
  9. Remove the pan from heat and let it cool down.
  10. Transfer the chutney to a serving bowl and garnish with coriander leaves before serving.
