Ilish Pulao
Ingredients:
- 500g basmati rice
- 500g ilish (hilsa) fish, cut into pieces
- 2 onions, sliced
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 3-4 green cardamom pods
- 2-3 cinnamon sticks
- 3-4 cloves
- Salt to taste
- 1/4 cup vegetable oil
- 2 tablespoons ghee
- 2 cups water
- 1/4 cup raisins
- 1/4 cup cashews
Instructions:
- Wash the rice and soak it in water for 30 minutes. Drain the water and keep the rice aside.
- Heat the vegetable oil and ghee in a large pan or pot. Add the onions and fry until they turn golden brown.
- Add the ginger and garlic paste and fry for another minute.
- Add the cumin powder, coriander powder, turmeric powder, red chili powder, cardamom pods, cinnamon sticks, and cloves. Fry for another minute.
- Add the ilish fish pieces and fry until they are lightly browned on both sides. Remove the fish pieces from the pan and keep them aside.
- Add the soaked rice to the pan and stir-fry for 2-3 minutes.
- Add the water and salt to taste. Mix well.
- Add the fried ilish fish pieces to the pan and mix well.
- Cover the pan with a lid and cook on low heat until the rice is cooked and the water has evaporated. This should take about 15-20 minutes.
- In a separate pan, fry the cashews and raisins until they turn golden brown.
- Once the rice is cooked, remove the pan from the heat and let it rest for 5 minutes.
- Garnish the Ilish Pulao with the fried cashews and raisins and serve hot.
