Ilish Macher Chutney
Ingredients:
- 1 cup ilish (hilsa) fish, cooked and flaked
- 1 onion, chopped
- 2-3 green chilies, chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon fenugreek seeds (methi dana)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 tablespoon sugar
- 1/4 cup vinegar
- Salt to taste
- 2-3 tablespoons mustard oil
- Coriander leaves for garnishing
Instructions:
- Cook the ilish fish and flake it into small pieces. Keep it aside.
- Heat the mustard oil in a frying pan or kadhai over medium heat.
- Add the mustard seeds, cumin seeds, fennel seeds, and fenugreek seeds to the pan and fry for a few seconds until they start to crackle.
- Add the chopped onions, green chilies, ginger paste, and garlic paste to the pan and fry until the onions turn translucent.
- Add turmeric powder, red chili powder, and salt to the pan and fry for a minute.
- Add the flaked ilish fish to the pan and stir well.
- Add sugar and vinegar to the pan and mix well.
- Cook for a few more minutes until the chutney thickens.
- Remove the pan from heat and let it cool down.
- Transfer the chutney to a serving bowl and garnish with coriander leaves before serving.
